Chocolate-PB Macadamia Slice

~ Makes 9 large slices


1/2 cup desiccated coconut

1/2 cup almond meal

1/4 cup cacao

1/4 cup honey

1 tsp coconut oil

- Mix ingredients together then press into a lined baking tin. Place in freezer while you make middle


1/3 cup smooth peanut butter

2 Tbsp maple syrup

3 Tbsp coconut cream (just the cream from top of can)

- Stir all ingredients together and pour over the base, return to freezer while you make the next layer

Chocolate layer

1/4 cup coconut cream (just the cream from top of can)

1/4 cup cacao

1/2 an avocado

1 tsp vanilla extract

Pinch of salt

1/3 cup roughly chopped macadamias

- Blend all ingredients together in a blender (except macadamias), until smooth. Spread over the peanut butter layer. Evenly sprinkle over macadamias, press down slightly and place in freezer for 2 hours or until set

Chocolate topping

1/3 cup cacao butter, melted in double broiler

1/4 cup cacao

2 Tbsp maple syrup

- Once cacao butter is melted, stir in remaining ingredients and pour over chocolate layer. Place in freezer to set

*Tip - Before slicing, remove it from freezer for 5 minutes to soften slightly. Warm a knife until warm water, dry with a clean tea towel and slice into even pieces
