Falafel & Quinoa Bowl with Satay Sauce

Ingredients:

  • 1 packed cup kale

  • 1/4 of an avocado (massage into the kale with your hands)

  • 1 bunch bok choy (optional)

  • 1 cup purple cabbage (thinly sliced)

  • 1/4 of a cucumber (scoop out the middle, cut into strips)

  • 1/2 a carrot (grated)

  • 6 cherry tomatoes (cut in half)

  • 1 cup cooked quinoa

  • 6 falafels

Peanut Sauce:

  • 1/4 cup smooth peanut butter

  • 1 Tbsp tamari or soy sauce

  • 1 Tbsp maple syrup

  • 2 garlic cloves, minced

  • 3 Tbsp lemon juice

  • Pinch of salt

To serve:

  • Fresh coriander

  • Peanuts
