Fluffiest Hidden Veg Cake



~ Makes 9 slices


Wet

3/4 cup pumpkin purée

1/3 cup pure maple syrup

2 eggs

1 tsp vanilla extract


Dry

3/4 cup blanched almond meal

3 Tbsp oat flour, any will work

1/3 cup cacao or cocoa

1/2 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp baking power

1/2 tsp baking soda

Pinch of salt


Chocolate Ganache

1/2 can coconut cream

2 heaped Tbsp cacao or cocoa

3 Tbsp pure maple syrup


Ingredients

• Preheat oven to 180°

• Line a baking tin with baking paper

• Add wet ingredients to a large bowl, mix until well combined

• Add dry ingredients to the wet and mix well

• Pour batter into lined tin

• Place in oven for 25 minutes or until a cake tester comes out clean

• Make the ganache by mixing all ingredients together, then spread onto the cake once it has completely cooled

• Top with buckwheat grouts and shredded coconut
