Thai Chicken Patties


- Makes 8 patties

Ingredients:

  • 500g chicken mince

  • 1 egg

  • 1 spring onion stalk

  • 1 red chilli, finely sliced

  • 2cm cube ginger, finely chopped

  • 2 garlic cloves, minced

  • 1 Tbsp fish sauce

  • 1/2 cup almond flour

  • Pinch of salt

To serve:

  • Sweet Thai Chilli sauce

  • Fresh lime wedges

  • Coriander

Instructions:

  1. In a large bowl, add all ingredients and combine well with a wooden spoon

  2. Heat a large pan on medium-high heat with a tablespoon of coconut oil

  3. Using a spoon, scoop up mixture, place on pan and press down slightly. Make 8 even patties

  4. Cook for 10 minutes or until patties are cooked right through
