Pea, Broccoli & Feta Patties




- Makes 10 patties

Ingredients:

  • 2 cups peas

  • 1 cup broccoli, finely chopped

  • 1/2 block feta

  • 4 eggs

  • 1/4 cup nutritional yeast

  • 1 cup flour (I used a mix of buckwheat flour & brown rice flour)

  • 1 Tbsp baking powder

  • 2 spring onion stalks, sliced

  • 1 Tbsp lemon zest

  • 1 tsp Himalayan salt


Instructions:

  1. Blanch peas until soft. Put 1 cup into a large bowl and set aside. Add the remaining peas to a separate bowl. Blitz into a pea puree, using a stick blender.

  2. Use a spatula to scoop pea puree into the bowl with whole peas. Crumble feta into the same bowl. Add all remaining ingredients and combine well with the spatula.

  3. Heat a large non-stick pan on medium-high heat with 1-2 tablespoons of oil. Using two spoons, scoop up mixture and form a round patty, place on the pan and press down slightly. Leave to cook for around 5 minutes, or until brown, then flip to cook other side.

  4. Repeat with the remaining batter. Serve with fresh lemon wedges and greek yogurt.
