Sweet Potato & Halloumi Nourish Bowl

Ingredients:

  • 1 Tbsp olive oil

  • 2 packed cups kale + mixed salad leaves

  • 5 cherry tomatoes, cut in half

  • 5 thin slices halloumi

  • 1/4 red onion, sliced into strips

  • 1 cup cooked sweet potato

Garnish:

  • Sesame seeds

  • Chilli flakes


Instructions:

1. In a medium bowl, place washed kale into a bowl and massage it with olive oil using your clean hands. Then add the salad leaves to the bowl.

2. Place a pan on medium-high heat with olive oil, cook onions and tomatoes until soft and fragrant. On the other half of the pan, fry off the halloumi until golden.

3. Remove from pan, add to salad bowl along with the cooked sweet potato

4. Garnish with sesame seeds and chilli flakes if you like a bit of a kick

5. Eat & enjoy :)
