Healthier Sweet & Sour Chicken

~ Serves 4


• 4 free range chicken breasts

• 1/2 cup tapioca flour or cornstarch

• 2 eggs

• 1 can pineapple chunks (142g) drain and save juice

• 1 red capsicum

• 2 carrots

• 1/2 brown onion, sliced into strips

• 1 stalk spring onion, sliced (save some for garnish)

• Cauliflower rice to serve

Sweet & Sour Sauce

• 1/2 cup apple cider

• Juice from can of pineapple

• 2 Tbsp tapioca or cornstarch

• 3 Tbsp tomato sauce

• 3 dates or 2 Medjool

• 1 Tbsp coconut aminos

• Salt & pepper

(Blend all ingredients in a blender)


1. Cut chicken into even squares, place in a large bowl and coat in cornstarch. Mix well so every piece is covered

2. Mix eggs in a bowl, add chicken and coat well

3. Add oil to a large pan, cook chicken on medium-high heat for 3-5 minutes each side. Then remove and set aside in a bowl

4. Cut up vegetables. Cook onion until fragrant. Then add carrot, capsicum and spring onions

5. Once vegetables have been cooking for 5 mins, add the sauce and pineapple chunks. Bring to a simmer

6. Return chicken to pan. Let simmer for 20 minutes

7. Serve with steamed cauliflower rice and garnish with spring onions
