Peanut Butter & Jam Bread

• 1 egg

• 2 cups oat flour

• 1 tsp salt

• 1 tsp baking powder

• 1/2 tsp baking soda

• 3 brown bananas

• 1/2 cup cooked sweet potato

• 1/2 cup plant based milk

• 1 tsp apple cider vinegar

• 1 Tbsp vanilla extract

Berry Jam

• 2 cups frozen berries

• 1/2 cup water

• 2 Tbsp chia seeds

• 2 Tbsp maple syrup


• Preheat oven to 180° and prepare a loaf tin with baking paper

• Mix dry ingredients together in large bowl

• Mix wet ingredients in separate bowl, then add it to the dry. Combine with a spatula then set aside

• Place berries, water and maple syrup in a small sauce pan on medium heat. As berries start to heat, mash them up into a jam

• Once berries start to simmer, add chia seeds. Turn down heat and let simmer for 5-10 mins, stir occasionally. Then remove from heat

• Pour half banana mixture into loaf tin. Create a little well in the middle, top with berry jam and peanut butter, then top with the remaining batter

• Top with more berry jam and place in oven for 50-60 mins

• Let cool completely before topping it with more jam and peanut butter
