Single Serve Sticky Date Pudding

- Serves 4

GF, RSF


Ingredients:

• 150g dates

• 2 Tbsp raw honey

• 1/4 tsp baking soda

• 1/4 tsp each spice: ginger + nutmeg

• 1/4 cup blanched almond meal

• 2 Tbsp coconut oil

• 1/4 tsp baking powder

• 1 egg


Caramel sauce:

• 50g dates

• 1/4 cup coconut cream

• 2 Tbsp raw honey


Instructions:

1. Preheat oven to 180*

2. Add honey, dates, and 2 tablespoons of water to a saucepan over medium heat. Cook for 6 mins then add the soda and set aside to cool.

3. Combine remaining ingredients, beat to combine

4. Then stir in the date mixture

5. Grease 4 mini silicon cupcake trays

6. Pour mixture evenly between the four, bake for 30 minutes or until a cake tester comes out clean after inserting. Let cool for 10 mins before removing

7. For caramel, place all ingredients in a blender and blend until smooth

8. Serve with ice-cream or yogurt and caramel sauce
