Chocolate Protein Bars


~ Makes 5 bars


Ingredients

10 pitted medjool dates

1/2 cup almonds, or almond meal

1/2 cup rolled oats

1/4 cup protein powder (I used Macro Mike)

1/2 cup desiccated coconut

1/4 cup cacao powder

1 Tbsp water


Instructions

  1. Soak dates in hot water for 5 minutes then drain water

  2. Line a rectangular tin with baking paper and set aside

  3. Add dates to a food processor and blitz until reasonably smooth

  4. Add the remaining ingredients and pulse to start. Scrape down the sides of food processor when needed. Keep blending until everything has blended together

  5. Press mixture into the lined baking tin with clean hands

  6. Place into the freezer for about 30 minutes to harden slightly, then slice into even slices

* Tip - place another piece of baking paper over top of the bars and press down firmly with a book or phone to get the bars nice and flat


These are best stored in the freezer!
