Ingredients
WET
3 super ripe bananas (mine were black)
3 eggs
¼ cup melted coconut oil
1/4 cup maple syrup
1 tsp vanilla extract
DRY
2 cups blanched almond flour
2 tbsp oat flour
2 tsp baking powder
1 tsp ground cinnamon
½ tsp baking soda
¼ tsp salt
Instructions
1. Preheat oven to 180 fan bake, and prepare a loaf tin with baking paper.
2. Mash bananas with a fork and add to a large bowl along with the remaining wet ingredients. Stir to combine.
3. In a separate bowl, whisk together all dry ingredients. Pour the dry mixture into the wet. Mix everything well.
4. Pour batter into your lined tin, place in oven and bake for 45 minutes or until a wooden skewer comes out clean.
5. Let it cool for a few minutes then slice with a bread knife.
